My name is Caroline Burkholder, MS, RD, LD, CEDS, and I am an eating disorder registered dietitian nutritionist and certified eating disorder specialist based in Knoxville, TN. I provide non-diet nutrition counseling to individuals in Tennessee, Georgia, and Maryland who struggle with eating disorders, disordered eating, and fueling for sport. My office is physically located in Knoxville, TN, but I can provide virtual services to residents anywhere in Tennessee, Georgia, or Maryland.

Who is a good fit for non-diet nutrition counseling and intuitive eating work?
I work with people who are tired of obsessing about food, tired of engaging in restrictive eating, tired of entering into restriction and binge cycles, and most of all, tired of generally feeling powerless around food. Maybe you are an athlete who has been told for years that you need to restrict your intake to reach your race weight. Perhaps you are woman who has spent your lifetime on and off diets, constantly pursuing weight loss and feeling like you can’t settle into a rhythm with eating. Or possibly, you are someone who simply once wanted to get a little healthier, and this interest evolved into an obsession. If your relationship with food is causing you pain, and if you find yourself constantly thinking about food, nutrition counseling may be an excellent modality for you.
What does nutrition counseling and intuitive eating work look like?
Nutrition counseling will help you establish consistent, sustainable, and varied eating patterns. Together, we will develop a practical strategy that renourishes your body and reduces the frequency of restriction, binging, and overeating, and restores the joy in eating. Going a little deeper, nutrition counseling will also help you identify how your relationship with food became what it is today. It is my hope that upon completion of treatment, you will view foods neutrally, without morality attached.
While individual goals vary, almost everyone that comes into my office for nutrition counseling brings with them the hope that their relationship with food will become less stressful. Some are currently struggling with a diagnosed eating disorder, others have a history of an eating disorder, and some don’t have any formal diagnosis, but know that thoughts of food occupy too much mental space. Who is not a good fit for non-diet nutrition counseling and intuitive eating counseling with me?
While I empathize with those who feel that they want to pursue intentional weight loss, I do not provide weight loss counseling, nor do I provide rigid, low-calorie meal plans that target weight loss as a goal. With this said, if you are looking for nutrition counseling with a firm goal of weight loss, I am not going to be the right provider for you.
We can certainly talk how about the possibility of weight change feels scary, and the difficulty you experience living in a body that you don’t like. Body image work is almost always a part of non-diet nutrition counseling. However, weight-centric interventions are proven to be ineffective, and even harmful, to clients, and I do not prescribe these interventions to my clients.
